Vikings Draft 2021: Five-round immediate impact mock draft

Chuba Hubbard – RB (Oklahoma State)
Mike Boone left the Vikings in free agency this year in search of a better opportunity with the Denver Broncos and that leaves them with a tiny vacancy in the backfield. Dalvin Cook will handle most of the workload in all likelihood, but Alexander Mattison failed to prove himself as the top backup last season.
Ameer Abdullah is back on the roster as a safety net of sorts, but Minnesota should consider adding an extra back to help alleviate the pressure on Cook. Chuba Hubbard entered the season as one of the top backs in the nation before sliding a bit.
Hubbard is a home-run hitter with a pretty impressive resume. He rushed for 2,094 yards and 21 touchdowns in 2019, but he saw a dip in production before opting out after seven games in 2020.
Hubbard averaged 5.9 yards per carry in his career at Oklahoma State and he should have a role at the next level. Cook has had a massive workload during his career, but he has never played in all 16 games. The Vikings should be prepared in the event he misses time again in 2021.
