Joe Banyard - RB
Arguably, no former Vikings player in the last decade had a more productive preseason career on the offensive side of the ball than Joe Banyard from 2013 to 2015.
In 12 exhibition games with Minnesota, Banyard rushed for 386 yards and three touchdowns in addition to catching 17 passes for 90 yards and another score. He even returned three kickoffs during his preseason career with the Vikings.
Unfortunately for Banyard, his preseason excellence wasn't able to transfer into the regular season, and Minnesota moved on from him before the start of the 2015 campaign.

T.Y. McGill - DL
During the 2022 preseason, T.Y McGill was a force on the defensive line for the Vikings. In three matchups, he finished with a total of seven tackles and 3.5 sacks.
McGill seemed like a lock for Minnesota's regular-season roster, but an ankle injury resulted in him landing on injured reserve instead, and the team parted with him before the start of the 2022 regular season.
